Determine chemical reaction stoichiometry?

Hey guys,

I am doing some chemical experiments and wanted to determine the stoichiometry of my reactions. For example, I have some minerals which I want to see how much of my desired element can dissolve during the leaching experiments. So should I wait until the concentration of my element in the solution (dissolved ions) reach to a constant level (reaches to equilibrium) and then I should write the equation and balance based on the initial and final concentration? I am completely confused with that :(
